                                                        I made a Vegan dish today in college. It was the Vegans take on Corn Beef and cabbage. It sounded horrible but was actually really nice.

                                                        The main stuffing part to replace the meat was shredded cabbage, courgette, onion, herbs and tofu. Instead of quinoa which had not been ordered, we used brown rice. It was a surprise to most people how nice it was.

                                                        Now my brat of a daughter has gone veggie I am interested in learning more recipes for her. It is an utter pain making different dinners for us all but have to support her

                                                            Lucie turned 14 at the end of January. She is a very slight girl and not sure what to make of her choice right now as she was seeing a dietician as she was only just over 4 stone 2 years ago. She is now 5'8" and still very very thin and I have reservations about the change right now as I am not totally sure it is good for her health. She is the one with the heart condition as well. She is anaemic and wanting to take her to the Dr for a blood test before she commits long term. She gave meat up for lent and plans on staying veggie.

                                                                            Did the week on a beach - Cape Town - Safari honeymoon. Beach thing was to keep her happy but was glad of it to recover from wedding crap etc. Would 100% recommend the safari part (assuming they're all as good as the one we were on - Ours was about 2 hours north of Port Elizabeth). Expensive but worth it. Plenty to do in Cape Town as said - wine tours, Camps Bay, Table Mountain, interesting museums/history, plenty of decent restaurants both in & out of the Waterfront. Did a day tour of the townships which was very interesting.

                                                                                Mm sounds nice, it's easy enough to make very tasty veg*n food however most chefs wouldn't need to learn how to so don't know how. I'd say cooking would be a really fun course/career? I love cooking. Probably very stressful as a job. Send me all recipes you love as you find them

                                                                                Speaking of cooking, made some nice roasted cashew, lemon, basil & nutritional yeast pesto last night mmm, so easy and good. Made caramelized onion pizza and stuck it on.

                                                                                If you have any questions ask me or the veggie forum on boards and we'll help out, have over a decade learning about the nutrition side of it at this stage. Since she is going veggie, not vegan I take it, it will be a lot easier for her to adjust at the start and get nutritionally complete food. It takes some learning for the uninitiated as people generally think vegetarian food is meat and veg without the meat or are simply not used to cooking/eating the meals. Sounds like she is in good hands though. My mother didn't really understand it and cooked me chops at the time

Each week we do a culinary event and have to include a veggie dish. This was the first labelled Vegan but I can send them on and you can tweak them if they not suitable.

                                                                                                She is just being veggie for the moment and no fish either as she explained that is something else when they eat fish products! That is funny at your mum serving chops lol.

                                                                                                The thing I made today would be nice inside a pepper as well and might try that. I did a gremolata the other week as well and it was really nice in the pepper. It really isn't all about removing the meat just from the plate!

                                                                                                So far I have done veggie lasagne, curry, chilli and bolognaise type dish and she has been delighted. It is tough though as I am doing Slimming World, cooking for the other kids and sometimes doing something different for the little one if the other dinner is spicy. Now I can be doing 4 different main courses!

                                                                                                  I spent my honeymoon there - Cape Town, Garden Route, Safari - and it was amazing.

                                                                                                  Food, wine, nature, culture, politics, history, sport, social diversity, extremes of everything - it's got it going on on so many levels.

                                                                                                  Would highly recommend it also and i hope to go back.

                                                                                                            Just bought Zombies, run! from the play store.
                                                                                                            It is basically an audio zombie story with some good voice actors. I was in a a helicopter, it crashed, I searched a hospital for supplies etc. When you find stuff you can use it in the app to build your base.
                                                                                                            Ended up running 8k there with it.

                                                                                                            The first item I found was a sports bra, thought that was pretty harsh app, pretty harsh.

Bring a warm jumper and you'll be grand. It will be the dry season though and daytime temps should hit 20 degrees. If you go further north into Mozambique or Botswana say, for us white-skinned Irish types it will probably be the best time of year for both weather and spotting animals.
