With the bit of nice weather today, decided the BBQ needed to come out.
Spatchcocked a chicken, marinated it in buttermilk and spices for 3 hours.
Lashed it on the BBQ, along with some hasselback spuds and served it up with a good dollop of slaw. It's not refined or fine dining in any way but sweet baby Jebus, it was delish, even if I do say so myself.
All washed down with a nice bottle.of Albarino.
